- 1lb Ground beef
- 6 Bell peppers
- 3 cloves Garlic
- 1 Onion, medium
- 1 tsp Oregano , dried
- 1 Parsley
- 1 (14.5-oz.) Tomatoes Can
- 1 tbsp Tomato paste
- ½ cup Rice
- 1 Black pepper, freshly ground
- 1 Kosher salt
- 2 tbsp Olive oil
- 1 cup cheese
Step 1
Preheat oven to 400°. In a small saucepan, boil rice. In a large skillet over heat oil. Cook onion about 5 minutes. Stir in tomato paste and garlic and cook, about 1 minute. Add ground beef and cook, breaking up meat with a wooden spoon, about 6 minutes.
Step 2
Stir in cooked rice. Season with oregano salt, and pepper. Let simmer until liquid has reduced slightly, about 5 minutes.
Step 3
Place peppers cut side-up in dish and drizzle with oil. Spoon beef mixture into each pepper and top with Monterey jack, then cover baking dish with foil.
Step 4
Bake until peppers are tender, about 35 minutes. Uncover and bake until cheese is bubbly, 10 minutes more.
Step 5
Garnish with parsley before serving.
